Some workshops sell "100% handmade" as a virtue. Some sell "fully CNC-machined" as a virtue. Our shop uses both deliberately because they're good at different things. Here's the honest read on which serves the piece better at each stage of the build, and why the dichotomy is misleading in the first place.
Three places, mostly: dimensional accuracy, repeatable joinery, and consistency across batches. A CNC router holds ±0.1 mm across a 2,400 mm cabinet side; no one cuts that by hand, and the cabinet that's 0.5 mm off square at one corner is the cabinet whose door won't close right in year three. For repeatable joinery (hinge cup pockets, drawer slide reliefs, identical mortises across forty matching cabinet doors) the machine is faster AND more accurate than any human.
The 80-cabinet-door batch project for the Haifa kibbutz dining hall is the right example: each door identical to the rest, all eighty installed in two days because the hinge cup depths matched across the batch. Hand-cutting that batch would have taken a month and produced eighty subtly different doors.
Three other places: anywhere the eye lingers, anywhere a curve is involved, and anywhere a surface needs to feel rather than just measure. CNC tool marks at the corners of a dovetail look like CNC tool marks; a hand-cut dovetail looks like a dovetail. Edge eases done with a router and a belt sander feel uniform and slightly hard; edge eases done with a block plane and a hand sand feel inviting. These are not measurable differences; they're the difference between custom work and good IKEA.
Here's the actual workshop sequence on a typical kitchen build:
CNC handles all the dimensional work — cabinet sides cut from sheet stock, drawer fronts profiled, hinge cups pre-drilled, all panels nested for material efficiency. This is the week of work that would otherwise take three. Then hand tools take over for everything else — dovetails on visible joinery, hand-planed edges, hand-applied finish, hand-buffed final surface. The CNC built the structure; the hand work made the piece feel like it belongs.
A "100% handmade" piece without CNC would have measurable dimensional variation that hurts the daily experience of using it (drawers that bind in one season and slop in another, doors that don't close flush). A "100% CNC" piece without hand-finishing would be measurably accurate but feel sterile — those edges, those corners, those last touches matter.
Three common ones we hear:
"Handmade means no machines at all." No. Every workshop for the last 200 years has used machines for the work machines do better than hands (planing rough stock, ripping boards, drilling repetitive holes). "Handmade" means hands made the visible decisions and the finishing touches.
"CNC is for mass production, not for custom work." No. CNC excels at one-off pieces too — generating a custom toolpath from a CAD model takes the same time whether you're making one part or fifty. The accuracy floor is the same. Mass production happens when you make the same toolpath fifty times; the custom piece is one toolpath you only run once.
"CNC pieces all look the same." No more than hand-cut pieces all look the same. A CNC piece is whatever the CAD model is — that's the whole point. The look is decided by the design, not by the tool.
You don't — you ask for the piece. The workshop decides which tool earns each stage. What you can ask is "how do you handle the visible joinery on this?" and "what does the finish process look like?" — those questions tell you whether the shop sees the difference or is just selling a method.
