How to choose wood for custom furniture

Choosing wood is the first real decision in a custom-furniture project, and the one that quietly determines everything that follows — how the piece moves with seasons, how it ages under daylight, whether scratches read as character or damage. This is the workshop's honest read on the question, written for clients who want to understand the trade-offs rather than just pick from a swatch card.

Solid wood vs plywood vs MDF

Solid wood moves. Every season, every shift in humidity, the cells in the wood expand and contract by tenths of a millimeter. On a kitchen door that's invisible; on a wide tabletop that's the difference between a flat surface and a cupped one. We build around this with floating panels, breadboard ends, and sliding bottoms — joinery details that let the wood breathe without splitting.

Plywood (we use Baltic birch for cabinet boxes) is engineered to stay flat. Cross-laminated layers cancel each other's movement. The edge isn't pretty — it shows the layers — but the structural performance is unmatched for cabinet sides, drawer bottoms, and anywhere a wide flat surface needs to stay wide and flat for twenty years.

MDF is the right answer for painted surfaces and only for painted surfaces. It mills to a glass-smooth edge that takes primer evenly, but it's heavy, it can't hold a screw under repeated load, and it cannot be left raw — exposed MDF picks up moisture and swells. We use it for painted cabinet fronts and signage; never for structural elements.

Oak, walnut, ash — what each does best

Oak is the workhorse. White oak in particular has tight grain, natural moisture resistance (historically used for whisky barrels), and it accepts hardwax oil beautifully. The color deepens slowly across years rather than yellowing the way pine does. The trade-off is weight — plan your hinges and slides accordingly. Best for kitchen cabinets, dining tables, library shelving, anywhere durability matters more than visual drama. See our custom kitchens page for the projects where oak earns its place.

Walnut is the choice when the piece is the room's focal point. Dramatic color, calm grain that reads as a feature rather than visual noise, pairs beautifully with brass and dark stone. Walnut is softer than oak though — we tend to use it for door fronts and visible panels with oak or birch ply doing the structural work behind. A walnut piece with oil finish needs a yearly buff with refresher oil to look its best; choose hardwax if you want zero maintenance.

Ash splits the difference. Lighter than walnut, more interesting than basic oak, and it takes stain beautifully if you want a tone that doesn't exist in nature. Ash also moves a touch more than oak with humidity changes, so we add an extra millimeter to door reveals on tall units to keep things from binding in winter. Underrated for furniture where you want oak-like strength without the heavy figure.

Pine we mention only to be honest: it's soft, it yellows fast under daylight, and the resin pockets bleed through paint. Fine for shop fitments and budget shelving in low-stress zones. Not what you commission a custom piece from.

Which woods age beautifully

The honest list is short: oak (white especially), walnut, cherry, teak. All of these darken slowly toward a deeper, warmer tone across the first five to ten years of daylight exposure. None of them go orange or yellow the way pine, beech, or fir do. The aging is one of the reasons we keep coming back to these species — a piece that looks better in year ten than year one is the definition of furniture worth commissioning.

What slows or stops the beautiful aging: heavy lacquers and tinted finishes. Lacquer locks the surface where it is the day it leaves the workshop. A hardwax oil or natural penetrating oil lets the wood develop its patina as it ages.

Which woods resist Mediterranean humidity

Israel's coast adds a real constraint. Sde Boker and the desert run dry; Tel Aviv apartments swing from 40% to 75% relative humidity across the year. That's a big range for furniture to live with.

Oak and teak handle this best — both are dense enough and rich enough in natural oils to resist moisture absorption. Walnut and ash do fine indoors but need stable humidity; for a beach apartment we'd push you toward oak. Anything outdoors or in unconditioned space (balcony shelving, outdoor benches) should be teak or iroko, full stop.

Best wood for kitchen cabinets

White oak for fronts and visible elements, birch plywood for the cabinet bodies. Oak handles the steam-splash-dry-air cycle a kitchen lives through; birch ply gives you cabinet walls that stay flat across twenty years of slamming doors. We use hardwax oil for the carcass and 2K polyurethane for the countertop perimeter near the kettle — same finish family, different durability profiles for where the abuse actually happens. Best wood for dining tables

A dining table is the hardest piece of furniture in a home. It gets hot dishes, cold glasses with condensation, kids with markers, dinner-party scuff marks across two decades. Solid oak with a hardwax oil finish handles all of this gracefully — small dents and water rings buff out, deeper scratches sand and re-oil. Walnut looks more dramatic but needs more babying. We do not recommend lacquered tabletops; the first deep scratch is forever.

How wood changes over time

Year one: the wood is settling. Color shifts noticeably as UV light reaches the surface; small movements happen as humidity finds its average. This is normal — not a defect. We tell clients to expect it.

Year five: the patina is real. Hard-use areas (table edges, drawer pulls) have darkened from skin oils; the rest has deepened uniformly. The piece looks like it belongs in the room now in a way it didn't at year one.

Year ten: this is when good wood proves itself. A solid oak table with a hardwax finish at year ten — buffed annually with refresher oil — looks better than it did the day it left the workshop. That's the trade you're making when you commission custom furniture rather than buy.

How to think about your choice

Start from the room, not the wood. What's the lighting like? How dry or humid does it get? What's the abuse pattern — daily kitchen use, occasional dining, a library that mostly holds books? Then pick the species that fits that environment, not the one with the prettiest grain on a sample card.
